Caymus Vineyards, headed by the prolific Wagner family and located in Napa Valley's famous Rutherford district, has been making top quality Cabernet Sauvignon since the early seventies, but has expanded its line to include several white wines as well. Cabernet Sauvignon still remains the focus, and their most famous product, at their main facility while Chardonnay is now produced in the Santa Lucia Highlands at Mer Soleil Winery.
The Mer Soleil 'Silver' Chardonnay is fermented in special cement vats imported from France, making it a very unique California Chardonnay. It is an effort to unite the crisp mineral essence of classic Chablis style whites with the tropical elements found in Chardonnay of the Pacific coastline, and judging by the scores of both the 2005 and 2006 (92 points Spectator both years), they have succeeded immensely.
The traditional, barrel fermented Chardonnay is made to be reminiscent of the white wines of Burgundy but with the generous sun-ripened flavors of California's Central Coast. Caymus Conundrum is a white blend whose exact composition is never revealed by the winery, hence the name 'Conundrum.' It is always produced from a non-traditional blend, creating a very distinctive character which can be paired with a diverse group of cuisines.

2005 Caymus Cabernet Sauvignon 750ml - $64.99
JJ Buckley, Jun 2007: "A very dark, inky core with a maroon rim edged by fuchsia hints. Rich and fruit forward up front, this is unmistakably California Cab. Big fruit aromas of black cherries, red cherries and cassis are complemented by mandarin orange zest and anise spice. There is also a definite underlying aroma of dusty earth with a wet, slate mineral edge. Very fruit forward on the palate and fresh up front. Medium to full bodied, with a bold tannic structure dominating the back palate. Good cassis and blackberry fruits with roasted coffee and baker's chocolate notes. Spicy cedar and vanilla linger on the finish. If you are going to drink this young, I recommend decanting and pairing with a big steak or bar-b-que ribs. JJ Buckley, Sep 2007: "Clear and bright in the glass with a medium lemon yellow core. Good intensity on the nose with ripe yellow apple, candied citrus and a touch of blue slate minerality. The palate presents the same rich ripe sweet yellow apple and pear up front with a nice moderate acidity keeping it crisp and clean. Honeyed notes and a touch of cream, candied lemon and some tropical pineapple and mango notes keep the mid-palate nice and round, and the wine finishes with a medium length of crisp bright fruit.
